Stir Fry Beef with Vegetables

If you are really pressed for time simply buy a bottled marinade sauce to replace 7 of these ingredients!. But taking all of the ingredients out of the cupboard is really the most difficult part of making it yourself.  Why not get the meat marinating the night before?  Then all you have to do for dinner is chop your vegetables and cook it all up.  If you don’t have a wok, a large frying pan does the trick if you cook in smaller batches.

Ingredients:

1 6 oz(s) steak -- thinly sliced across grain, 1 1/2" strips
2 tbsp peanut oil`
2 tbsp soy sauce
2 tbsp cooking sherry
2 tbsp water
1 garlic clove(s) -- crushed
1 tsp fresh ginger -- grated
2 tsp corn starch
1 onion -- sliced thin, 1 1/2" strips
1 green bell pepper -- or yellow, sliced thin, 1 1/2" strips
1 red bell pepper -- sliced thin, 1 1/2" strips
1 cup(s) broccoli -- cut into florets
1/2 cup(s) bamboo shoots -- drained
1 1/2 cup(s) whole grain rice -- uncooked

Directions

Prep Work:  Slice meat.  Combine next 8 ingredients in ziplock or dish with meat to marinate.  Chop vegetables, storing peppers together and onions separately. Cook rice.

1.  Make rice according to manufacturers directions.

2. Heat 2 Tbsp. peanut oil on high heat (350 degrees for wok) in a large frying pan or wok.  Stir-fry the onions for 3-5 minutes , then add peppers and broccoli for 3 more minutes or until they are soft but still just a little crisp.  Add bamboo shoots and move vegetables to a covered serving dish.

3. Clean out pan of any leftover fragments with your spatula, then heat 1 Tbsp. peanut oil.  If using a wok it should be at 400 degrees.

4. Stir-fry meat for 2 minutes or until no longer pink.  Pour vegetables back into pan with meat. Stir-fry just until heated through. Transfer to serving dish.

5. Serve over rice.
