Super Spaghetti w/ Beef and Carrots

Here is a variation of Super Spaghetti using the same healthy spaghetti squash for noodles but adding carrot, kale and ground beef to the sauce instead of mushrooms and turkey sausage. The leftovers make great lunches, or if you have big eaters like me, I double it and freeze the extras for dinner another night because it freezes well.  That’s how to save time AND eat well.

Ingredients:

1 onion -- diced
4 carrots -- large, scrubbed and diced
1 1/2 lb(s) ground beef
3 tomato(es) -- diced
1 bunch kale -- stemmed and chopped fine
1 1/2 tsp salt
1 tbsp thyme -- dry
2 garlic clove(s) -- crushed
3 tsp lemon pepper seasoning
1/2 spaghetti squash
1 tbsp butter
2 tbsp nutritional yeast -- OPTIONAL

Directions

Prep Work:  Dice onions, tomatoes and kale; store separately.

1.  Heat oven to 350 degrees.  Pierce spaghetii squash through with sharp knife 6 times all around and place on baking sheet. Bake 40 min.

2.  Heat large skillet to medium and saute onions and carrots in cooking oil 3 min.  Push onions and carrots to edges and crumble meat in middle of pan.  Cook 2-3 min. stirring once or twice. 

3.  Sprinkle tomatoes and kale over top of meat and cover pan with lid. Turn heat to medium/ low and let simmer for approx. 4-5 more minutes.  Add a few tablespoons of water or broth if needed.  Vegetables should be soft when done.

4.  Add seasonings: salt, thyme, garlic and lemon pepper.  Stir to incorporate, turn off heat and put lid on pan to let it set for a few minutes.

5.  Cut squash in half length wise on a cutting board. Remove seeds with a large spoon and discard.  Scoop “noodles” out with a spoon and place half in serving bowl. (Freeze the rest for another day or to use as a side dish later.)  Toss with butter and salt and pepper to taste.  Adding the optional nutritional yeast at this point is very tasty, and you can also squeeze a few teaspoons of fresh lemon juice over the noodles.

Serve meat sauce over a bed of squash “noodles” and sprinkle with your favorite grated cheese as an extra treat.
