Sweet Potato Fries
Time Required: 5 (45 min. total)

Here is another way to enjoy beta carotene rich sweet potatoes.  They are a simple, delicious and nutritious afternoon snack or side dish for a meal.


4 sweet potato(es) -- scrubbed and cut into 8 wedges
1 tbsp olive oil -- approximate
1 tsp cumin
1 tsp paprika
1 lime -- OPTIONAL; cut in wedges


1.  Preheat oven to 400 degrees.

2.  Put potatoes on a baking sheet and sprinkle lightly with olive oil, cumin, paprika, and salt & pepper. Toss to coat and spread evenly over pan in a single layer. 

3.  Place in oven and set timer for 40 min.  Check a few times to stir potatoes.

4.  Serve with ketchup, ketchup mixed with bar-b-q sauce, or wedges of lime.
