Vegan Brownies
Serves:
Time Required: 15 (1 hour total)

Walnuts and soaked dates are the main ingredients in this VERY chocolate brownie. I consider these an after workout treat because they are filled with body rebuiding ingredients like protein and complex carbohydrates. The small amount of sugar they do have can be replaced with liquid stevia and raisins if desired.*

Ingredients:

2 1/2 cup(s) walnuts
20 soaked dates
2/3 cup(s) cocoa powder
1 tsp vanilla extract
pinch salt
4 tsp pineapple juice -- or any other kind
1/4 cup(s) brown sugar
1/2 cup(s) chocolate chips

Directions

1.  Blend or process walnuts in a food processor or blender until finely ground.

2.  Add dates and blend until ingredients stick together.  Add all the rest of the ingredients except chocolate chips (or raisins) and blend just until combined.

3.  Stir in chocolate chips (or raisins).

4.  Cut parchment or waxed paper to fit in and overlap the sides of a square container approximately the size of a bread loaf pan.  Press dough into bottom and refrigerate until firm.

5.  Take out brownies by lifting paper and cut into squares. Store in and airtight container.

*Sugar Free:  Omit or reduce brown sugar and use approximately 10 drops of liquid stevia instead. Replace chocolate chips with raisins, dried cranberries or cherries.
