Veggie Sandwich

If your hummus is already made then here is another great way to use it.  You can buy some or use our recipe.


8 slice(s) whole grain bread
1 cup(s) hummus
1/4 cup(s) cream cheese
1 English cucumber -- thinly sliced
2 carrots -- scrubbed and grated


1.  Grate carrots and slice cucumber.  Stir cream cheese with a spoon in small bowl to soften.

2.  Spread half of the bread slices with softened cream cheese, and the other half with hummus. 

3.  Spread out the carrot and cucumber on the hummus, then top with the cream cheese bread. Cut in half or fourths.
