Delicious Brussel Sprouts

Time Required: 8 (12 min. total)

Orange Tree Lane testers really did think this is a great way to eat this powerful little member of the antioxidant rich, cruciferous family. In addition they provide mega amounts of vitamins K and C!  Balsamic vinegar gives it a delicious sweet and sour taste at the same time. Turkey bacon is an optional addition explained at the bottom.

Ingredients:

9 oz(s) brussel sprouts
2 tbsp butter
3/4 cup(s) red onion -- sliced 1/2' by 1'
2 tbsp balsamic vinegar

Directions

1.  Cut ends of sprouts and remove thick, outermost leaves. Cut in quarters from top to bottom.

2.  Steam in a steamer basket or pot with 1” of water and tight fitting lid, just until they turn bright green, approx. 3 min.

3.  Meanwhile, heat butter in skillet with a lid,  and add onion when melted and bubbling.  Cook onions until transparent, approx. 4 min.

4.  Add brussels sprouts to pan, saute for a few minutes then turn off heat and place lid on top of skillet.  Let pan sit just until sprouts are soft.  Remove sprouts from pan so they don’t over cook.

5.  Toss with vinegar, salt and pepper to taste and serve.

OPTIONAL ADDITION: Chop some turkey bacon and add to skillet along with onions.
