Noodles and Cheese Sauce (Mac-n-Cheese)

Why the two names?  Because when the first name is used no one will compare and be disappointed that it isn’t just like out of the box!  If whole grain noodles are new to your eaters, then try using only half whole grain noodles for a smoother transition into the new taste.  Half of the fiber is better than nothing!  This cheese sauce can also be poured over steamed broccoli for a delicious side dish.

Ingredients:

10 oz(s) whole grain noodles -- spelt, wheat, rice
3 tbsp butter
3 tbsp flour
2 1/2 cup(s) milk
6 oz(s) shredded cheddar cheese

Directions

Prep Work: Shred cheese if needed.  Boil noodles.

1.  Boil noodles according to package directions.

2.  Melt butter in skillet.  When bubbling, whisk in flour.  Pour in some milk and whisk until smooth.  Keep adding milk with whisk until all combined. (see Broccoli Chicken video for whisking gravy technique.)

3.  Add cheese and keep stirring until melted and slightly thickened; up to 10 min.

4.  Drain noodles and return to pot and stir in cheese sauce.  Add 1/2 tsp. pepper and salt, then keep adding salt 1/4 tsp. at a time to bring out the taste.
