Spring Slaw

Cabbage is a rich source of cancer fighting anti-oxidants, so I am always looking for a place to put it.  Here it is the star, and adding the sweetness of oranges and raisins is a nice touch for spring or summer.  I like to cut my cabbage fresh, but you can certainly save some time by purchasing it pre-shredded. You can also replace some or all of the mayonnaise with plain yogurt.

Ingredients:

1/2 cabbage
1/4 cup(s) raisins
1 green onion -- minced
2 orange -- or pineapple, cut into 3/4" pieces- see video
1/3 cup(s) mayonnaise -- can mix or replace w/ yogurt
2 tbsp apple cider vinegar
2 tbsp lemon juice

Directions

1.  Toss cabbage, raisins, onion and oranges in a salad bowl.  Mix the other ingredients together first and then toss with cabbage.  Salt to taste.

*When salting, do it is small increments because you certainly don’t want more than necessary, but there is also a point where it goes from a little bland to delicious.
