Yummy, Healthy Pancakes sans Syrup

Say hello to pancakes that are so good they could be dessert, yet are loaded with nutrients to start your day off right.  Purchase a whole wheat or GF pancake mix, or better yet, make your own using the Orange Tree Lane Bulk Pancake Mix recipe.  Either way, we’ll help you mix it up right for a delicious yet healthy breakfast. (Leftover batter keeps for a few days in the refrigerator.)

Ingredients:

3 egg(s)
1 cup(s) buttermilk -- or 1 c. milk plus 2 tsp lemon juice
1/2 cup(s) applesauce
1 1/2 cup(s) pancake mix -- OTL Bulk Pancake Mix or purchased
1/2 cup(s) walnuts -- chopped fine, roasted(optional)
1 apple(s) -- chopped into 1/2" pieces
1 banana(s) -- chopped 1/2" pieces
2 tsp cinnamon
3 tbsp turbinado sugar -- or sucanat for more carmel taste
1/2 cup(s) vanilla yogurt -- optional topping
1/2 cup(s) applesauce -- optional topping

Directions

Prep Work:  If using bulk pancake mix, combine flours according to Orange Tree Lane recipe and store in large plastic container.  Chop apple and banana. (Toss with 1 tsp. lemon juice if doing this early.)  Roast walnuts by shaking them in a hot frying pan without oil until lightly browned.  Chop and store in airtight container. 

1. Blend first three pancake ingredients until thoroughly combined.  Then add pancake mix and stir just until blended. 

2. Heat cooking oil on medium heat in large skillet. Pour pancake batter and sprinkle with approx. 2 tsp. chopped walnuts.  Flip after bubbles cover half of surface of pancake batter.

3. While pancakes cook, chop apple, banana, and sprinkle with cinnamon, sugar, and walnuts.  Set aside to juice while you finish pancakes.

4   Cover pancake with yogurt or applesauce before sprinkling with fruit mixture.
