This is a delicious way to eat chicken breast because if you use a thermometer it will stay nice and juicy. For a side vegetable you can add the
Spring Slaw
to your menu, or simply scrub some
carrots
, chop and simmer, and/or put together a fresh salad. (See end for directions.) Set aside one third of the chicken for the paired recipe
Chicken Tacos
to save yourself time, or use it sliced thin for great sandwiches, to top a salad, a home made pizza or to tuck into quesadillas.

ALMOND CRUSTED CHICKEN
The extra chicken you saved from the Almond Crusted Chicken will make this dinner come together in a snap, but if you are going to make it alone, simply buy a cooked chicken or fry some up yourself on the stove top. Since you're putting a lot in the taco shells, you might want to double layer the tortillas for each taco in order to keep them from tearing. It really depends on how much you pile on and the sturdiness of your tortillas!

Broccoli Cheddar Quiche
Morning doesn't usually leave time for making home made quiche, so enjoy the vitamin, mineral and protein rich eggs for dinner instead. Look for a whole wheat frozen pie crust, or save calories by enjoying your quiche without it. If pressed for time the potatoes could be substituted with whole wheat toast. This will serve 6 small appetites or 4 medium, so just double and make two if needed. Add a fresh green salad or some cooked dark greens as another side with the oranges if making this for dinner to round out your meal.

Peach Cobbler
Peeling the skin off of peaches is time consuming, so don't do it. We barely noticed they were still there because we were enjoying the wonderful contrast of tangy peachyness and sweet bread topping in this wonderful combination of flavors and textures. Besides tasting like summer, peaches provide vitamin C and fiber, which is a nice quality for a dessert.

Chocolate Breakfast Bread w/ Juicing Fiber
I love this bread for five good reasons: 1) It tastes great and freezes well. 2) It uses the fiber left over from juicing vegetables. 3) I can eat it for breakfast really quickly and it keeps me full. 4) It is sweetened with honey, moist and yummy. 5) It's chocolate. If you try it maybe you will have even another reason! Try a slight variation as
